Try this amazing salad! Makes 8 servings!
12 ounces of dried orzo
1/3 cup of lime juice
1/4 cup of olive oil
1/4 cup of snipped fresh cilantro, plus more for garnish
1/2 teaspoon of salt
1/4 teaspoon of ground black pepper
1 1/2 cups of fresh blueberries
1 1/2 cups of fresh corn kernels
2 green onions, diagonally sliced
1/2 cup of crumbled feta cheese
Cook brown rice according to package directions. Rinse with cold water to cool quickly; drain well.
Combine lime juice, oil, cilantro, salt and pepper in a screw-top jar; cover and shake well to combine.
Combine rice, blueberries, corn and green onions in a large bowl. Add dressing; toss to coat. Serve at once or cover and chill up to 24 hours. Top with feta and sprinkle with cilantro before serving.
